RICE PUDDING

Ingredients
1 litre milk
1 stalk lemongrass, bruised
1 tablespoon (15ml) butter
1/2 cup (125ml) castor sugar
1 teaspoon (5ml) vanilla essence
100g short grain rice
1 teaspoon (5 ml) Robertsons Cinnamon
2 -3 strawberries, sliced
1/2 teaspoon (2,5 ml) Robertsons NutmegInstructions
- Place the milk in a saucepan, add the lemongrass, butter, sugar, vanilla and rice and spices. Heat the liquid until it is almost boiling.
- Reduce the heat and simmer for about 1 hour, stirring occasionally until the rice is tender and the liquid is absorbed.
- Remove and discard the lemongrass.
- Divide the rice between 4 bowls and top with the sliced strawberries and serve immediately.
