GINGERED TROPICAL FRUIT SALAD

Ingredients
500g watermelon cut into large pieces
1 small pineapple, peeled and chopped
1 small red papaya cut into large pieces
12 lychees, peeled
3 kiwi fruit, sliced
1/4 cup lime or lemon juice
1 tablespoon (15 ml) sugar
1 tablespoon (15 ml) preserved ginger syrup
1-2 pieces preserved ginger
½ teaspoon (2,5 ml) Robertsons Ground Ginger
6 Robertson’s Whole Cloves
1 Robertsons Cinnamon Stick
Zest of 1 lime
1 cup (250 ml) water
Instructions
- Place the watermelon, pineapple, mangoes, lychees and kiwi fruit in a bowl and gently combine.
- Place the lime juice, sugar, preserved ginger syrup, preserved ginger, ground ginger, cloves, cinnamon stick and lime zest and water in a saucepan and stir over a low heat until the sugar dissolves.
- Bring to the boil, reduce the heat and simmer for 10 minutes or until the syrup is reduced by half.
- Allow to cool slightly. Remove the cloves and cinnamon stick.
- Pour the syrup over the fruit and refrigerate until cold.
