Ingredients
2 teaspoons (10 ml) Robertsons garlic Flakes
2 teaspoons (10 ml) Robertsons ground cumin
6 bone-in chicken breasts, with skin
2 tablespoons (30 ml) Olive oil
4 teaspoons (20 ml) Robertsons Italian Herb Seasoning
Salt and pepper to taste
Fresh coriander to serve
2 teaspoons (10 ml) Robertsons cayenne Pepper
Instructions
- Arrange chicken pieces in a lightly greased 9x13 inch baking dish, allowing room between pieces. Combine oil with cayenne pepper, cumin, garlic flakes, Italian Herbs and salt and pepper to taste.
- Rub over the chicken even rubbing under the skin where possible.
- Cover dish with foil or a lid and bake for 40 minutes to 1 hour at 190 c, or until chicken is cooked through and juices run clear.
- Top with fresh coriander and serve with rice.
